Advice on guided UK cycle holidays sought

Hi there,
I've got some questions about UK based Cycle Holidays. A group of riders from my club are interested in doing something in the UK. Possibly challenging. But we don't know what to go for?
Can anyone answer some of these questions for us?
How many people do they cater for on a guided holiday?
What are the guides like?
What type of person goes on the trips?
How old are people generally (if we end up with strangers we're going to want to be able to relate to them)?
Where do they target their punters?
Which companies are the best?
Do they offer anything competitive?
Tour or center based?
