I have 105 on my bike and when changing to a higher gear at the back there is a definite clunking noise, changing to a lower gear is completely quiet and seamless, in fact I don't even know its happened except for the feel on the pedals, is this the norm or can I do anything to stop the ' clunk',

It just needs adjusting, you can have a look at YT vids on how to do it. Or take it down to your LBS. Should take about 5mins to sort out.

+1, 105 is pretty much bomb proof.
