Currently using a compact, but think it might be worthwhile pushing back up to a full size ultegra chain set-can you just replace the chainrings on ultegra 6700? Or will I need to get a new crankset?

New crankset sadly.
The BCD (distance of the chainring bolts from the centre of the crankset) is different. 110 for compact, 130 for standard double.

Stick with the compact unless you want to join the big boys.

Yep. Should just be a allen key and a large flathead screwdriver.

No, he's going compact to standard, not vice versa so it does work.
