Building up a bike using 2nd hand parts. I need a cassette, non on ebay at the moment, so looking in various online shops. Is there any difference between the 2 apart from weight?

they both pretty much do the same thing - so weight is largely the difference due to material and finish may be slightly higher standard on the ultegra

I can not tell the difference shifting wise between my 105 and ultegra cassettes on the same bike. They are both spot on.

The finish of an ultegra cassette is nicer, the lockring is fancier and the sprockets probably look a little nicer.

I can definitely not feel the difference in weight - but it is there for those who are worried about such things

The difference in weight is due to the lock ring I think. The cassettes are the same, apart from the finish (the ultegra is matte, the 105 is shiney)
