Sizing and bike choice help

Hi all
It's my first post but I have spent a number of months' perusing the forum in advance of my upgrade!
My current bike is a 1980's (I think) Peugeot Equipe. I have done a number of triathlons and sportives on it but it is time to upgrade.
I am looking at spending no more than £1,000 and after quite a bit of looking around have narrowed it down to the following:
Sensa Toscana Special

Sensa Trentino SL Pro 2013

Planet x RT-57

Each has its own advantages over the others, the Sensa Toscana is full carbon with 105 kit, the Sensa Trentino, whilst alu', is lighter than the Toscana and has (mostly) Ultegra kit and the Planet X is full carbon with Sram Rival.
I am leaning towards the Toscana due to the Ultegra kit and weight but am still torn as the other 2 are full carbon. Please do let me have your thoughts on which I should be going for.
Also, I know my size for the Planet X, thanks to their helpful sizing guide, but am not so sure for the Sensas. I do not know how to read geometry charts and wondered if you guys would be willing to help.
I am just under 6"1 (184 cm) with a 33" (84cm) inseam.
If you need any more info, or measurements (within reason of course :oops: ) please let me know.

This might help, but there's no reliable substitute for trying the bikes.
