Looking at buying a new bike equipped with electronic shifting ultegra Di2. However it comes with 11-25 cassette. Does anyone know if I could replace this cassette with an Ultegra 12-30 ?

Yes, it should work. You will probably have to get a longer chain though.

I have no idea what's going on here.0 -
I expected to need a longer chain but would I also need a long cage derailed?0

I run an 11-28 on my Di2 with no problems. 30 will work fine.0

Is the derailleur compatible with a 30t ring. I know some of the mechs only support up to 28t0

As someone said above, it should work fine. Shimano will make statements like that but a derailleur is a very basic thing, and it deals with different lengths of chain. If it can manage a 28T cog, I would assume that it can probably manage a 30T cog, but I'm merely reasonably certain of that; my conviction is not absolute!0
