Chainset tools (Do I need them)

I have a new Chain set, Shimano 105, so do I have to buy the tool or can I do it without?

it depends on what you are actually replacing.
add preload can be done by getting agricultural on it. cups tools are needed.

I am replacing the crank arms and chain wheels. On a road bike. I just want to remove the old one and install a new one.0

If you need to remove bearings (numbers 6&9) specialised tools will be required. You will also need a tool to remove crank arm fixing bolt (1) and of course allen keys

Depends on what you're taking off and what you're putting on. If it's all Hollowtech 2 stuff and you're leaving the BB cups in place, all you'll need is an allen key and the little plastic tool for tightening the preload cap on the non drive side.
If fitting new HT2 cups you'll need the relevant BB tool (I'd recommend the socket type rather than the pressed steel Shimano spanner; I have the latter and it's a bugger to keep in place, uncomfortable on your hands, and easy to damage the cups)
If you're going from square taper or Octalink BB you'll also need the tools to remove the old parts. Possibly a crank puller, and certainly a splined BB tool.0 -

It is the Hollowtech II stuff, and I am not changing the BB Cups, it is just that little plastic thing. Any way I can bodge it. I do have allen keys0 -
make sure the axle is fully through by whacking the chainset with the flat of your hand / soft mallet. The plastic thing then only needs to be finger tight to preload the bearings before progressively tightening the pinch bolts.0

The plastic tool to remove / fit the preload cap is only a couple of quid, and some BB tools include one anyway.
If you got a new cap with the new crankset you can just whack a chisel or large screwdriver into the old one to unscrew it.
If you need to reuse the old cap I'd suggest getting the tool.0 -
