Cables and casings - SRAM red

Hi everyone,
I'm rebuilding my Cervelo and have acquired all the parts. It's currently all stripped down.
I'm using SRAM red parts and will be getting it built by my LBS.
The only missing component is cables and casings as i always make a habit of throwing away cables when stripping a bike.
Are there any specific cable inners i should use or is it normal for the LBS to use whatever they have?
And for outers, i would like white jagwire and as this is quite specific, i gather i should purchase it and hand it over with all the other bits.
Therefore it raises another question: how many metres of jagwire to build a bike?
