Some advice please - off-road touring in New Zealand

Hi all,
I'm semi-permanently moving to Dunedin in the spring, and there are a lot of off-road trails I'd like to explore. Firstly I was thinking of going up the (sedate) Rail Trail to Alexandria, then over to Cromwell and Queenstown then along the off-road trails around Lake Wakatipu for a while, then coming back on the Old Dunstan Road, then another time trying the trails from Blenheim>Hanmer Springs>Nelson. Although none of these trails are technical, they are rather 'rugged'. I've found some pictures below:

The question is - do I build up a beautiful 1970s Holdsworth Mistral with some modern-ish (but classic looking) components and off-roady tyres (it can take 37c with mudguards), or do I build something more rugged - an On-One Inbred 29er with drop bars? Basically, will the Inbred be necessary or would it be overkill? I'll be camping but travelling on the light side.
