Cassette compatibility

I have a wheel set that had a 10 speed Shimano cassette fitted.

I am thinking of building up a cheap bike using 2300 or Sora groupset.

Will an 8 speed cassette fit these wheels?

    Yes.

    When you removed the 10sp cassette, then if it was 105, Ultegra or DA you would have found a thin spacer behind the cassette - you won't need this with a 8sp cassette.
    If it was a Tiagra 10sp cassette, that doesn't use it

    Note you can use 8sp Shimano or SRAM cassette equally well

    as above if it has the standard shimano spline patten and not the 10spd only raised splines.
