Replacement wheels bearings

Need to service my wheels (XT V brake) and looking to replace the bearings, but unsure which bearings to buy, i know the size for which shimano uses and the number but there are soo many different types i haven't a clue what to buy, so looking for advice.

Was reading about and they suggest grade 100 or better.:/
Was looking at getting these but will they be good enough?
