What Is The Minimum Tyre Width..?

I have just purchased a Cube CLS Pro Hybrid 2013 (Disk brakes) that has Schürmann Yak 19 Disc rims and fitted with Schwalbe 700-40c tyres (28x1.60) / (42-622).. I am after slicker tyres. What size can I goto on the rims.. For example, could you fit some 700 x23c or 700 x25c wire tyre.. Also what is the difference between folding and wire.. Is it just ease at which they fit onto the rim. Many thanks in advance for any help.
Cannot seem to find anything on the Schurmann site to identify a minimum width for the YAK 19 rim or any form of table or something to help..?. Fairly inexperienced yet when it comes to cycle parts / tech etc..

What is the internal width of the rim? 19mm?0

19mm Internal, 25 External (32 holes).. Looks to me like a tyre range of 28-62mm (http://www.schuermann-rims.com/produkte ... -rims/yak/).. It's currently on Schwalbe Smart Sam Wired 28x1.600
