Shimano R501 Wheelset

Hey All,
I am looking to replace my other half's Specialized Sirrus wheelset, which was pinched when she was visiting me in hospital last year. I have found a set of Shimano R501's for sale on Ribble, and was wondering if they can take 700c x 28 tyres? Failing that, how about a set of Fulcrum 7's?
I've found tables with wheels sizes online but they don't tell me whether a slightly wider tyre will fit or not. The rims taken were Alex S500's (so nothing special) but our LBS has quoted around £130 just for the rims, or £160 all in, which I think is too expensive. Anyone any ideas or can you recommend a set of rims for me?

Will be absolutely fine - pretty sure I had 501's on my cross bike and ran much wider tyres that that!
