I havent cycled properly for many years after a spine op.
I really want to start Again but before I commit to buying I really need to know that my body can deal with it. I suppose what I'm after is an extended test ride on a bike properly setup for me. Is this unrealistic to expect or are there dealers out there that would accommodate? I am Oxfordshire Buckinghamshire border.
Any advice appreciated.

Most LBS will offer some form of test ride but extended may be be difficult. Specialized stores quite accommodating and although Evans take a beating on here for inconsistent service they are good for short half hour test rides and will order a bike In from stock if not In the branch most local to you.
From your budget work out what is affordable and spec you want and draw up a shortlist. Then go and try for size and the one that fits and feels best is probably the one to go for.
