Bit of a weird one. I have a Joes no flats kit. sealant, rim strips and rim tape in my shed but have recently acquired some stans arch ex rims. Would I be right in thinking that if I get the stans universal valves I could use the roll of joes sticky rim tape and sealent to run my normal tires tubeless?

Yes, the rim strips are for non-tubeless rims.

Should be fine. You don't even need to buy proper valves, if you've got a couple of old tubes knocking about just cut the valves out of them.
