Changing brakes - do I need to change disks

Whats involved with this?
The Shimano XT M785 do not come with disks so I assume (probably wrongly) that they can be used on any disk - is this correct?
I am thinking of replacing the stock Elixirs on my 2012 Trance x3

You can normally use any disc you like as long as is the right size. Will be fine.0
