Ive just aquired a bike wih dura ace rims on complete with ultegra 10 speed cassette. I want to buy a set of spare (cheap wheels) for the wet etc. do i need to get anything specific. I realise if they are 700cc they will fit if they have a 10 speed cassette already on but what if they are bare wheels what do i need to lok out for or is it just as easy as buying wheels and a cassette and fitting it (cant be surely) please help.

Just as you say, buy a set of bare wheels and a 10 speed cassette to match the one on your existing wheels, very easy to fit the new cassette.

so do the wheels have to be shimano specific? or do they need to be able to fit a 10 speed? my other option is if i buy a set that has 7 speed cassette i take it that would work but only obviously for the 7 as aposed to the 10 or does it not work like that

The wheels dont have to be Shimano branded wheels but you need wheels to be Shimano fitting, by that i mean the rear hub needs to be Shimano fitting, i dont think 7 speed cassette wheels will fit a 10 speed cassette. maybe someone here will come along soon and offer more help.

10 speed cassette will fit on 8/9/10 speed free hub not a 7 speed one.

If you want a set of reasonable and cheap wheel look at Como wheels from Quest bikes (these are ProLite wheels).
