Back "roads" around Sestriere

Can anyone offer any thoughts as to how rideable the offroad bits - specifically from the top of the Finestre to Sestriere, and Sestriere to Claviere - will be on a road bike? NB obviously, and I mean obviously, this will only be attempted when its dry and sunny.

It's difficult to work out from the linked map which are the 'offroad bits'. Your route seems to be pretty much entirely on either routes nationales/departmentales in France, or strade statali/strade provinciali in Italy (which are the equivalent). All of these will be tarmac.
IME unsurfaced roads in Italy are do-able if say you have a road bike with 25mm tyres (and a bit of patience and sense of adventure) - with less it might be a bit more iffy. 'Piste ciclabile' are usually tarmac.0 -
