The best training?

I am generally trying to improve my fitness as and when I can (being in hospital a lot at the moment), also trying to lose a bit of weight.
But when I get back onto my bike soon, what is the best sort of training for a 5 day 260 mile ride? It's not overly hilly in Denmark, but is often windy.
So, do I go for short fast rides i.e. go for a 15 or 20 mile ride and do it as quick as possible? or do I go for long rides, but take them easy. i.e. 50 or 60 miles over a day. Do I go for offroad up hills to build up my strength.
Any ideas?

Just time in the saddle, I think. I've done a lot of touring and unless you are trying to do something exceptional, it is pretty gentle cycling. Put in some time in the saddle, to accustom your body to sitting on a bike and pedaling for longer periods of time. Speed and power workouts really aren't going to be necessary. Overuse is the likeliest problem you'll face and that is best tackled in advance with long gentle hours on the road.0

I'm most concerned about doing myself an injury from going to mad early on.0
