Randall & Hopkirk's already been mentioned, but there seem to have been umpteen classics out of the Lew Grade/ITC stable thanks to the likes of Ron Grainer, Edwin Astley, etc. Overlooking its star's dodgy public loo-related activities aside, this is dangerously catchy:

I went up to see a friend having a day driving steam trains at the weekend and ever since this one from Chigley has been stuck in my head (not strictly a theme tune but probably better remembered and Half Man Half Biscuit's tribute was pretty good )
