Ill have around a 1k budget for a new bike at the end of the year and I want something I can use all year round so it must have guard mounts
I would also like 105 components
So far on my short list is:
Trek 2.1
Genesis Equilibrium
What other bike should I be going to look at?
Most bikes I look at don't have mounting points, I know I could run other mudguards but I can't imagine they are going to be as strong,

Some of the Boardman road bikes (and the CX bikes) have mudguard mounts i believe.

The Genesis Equilibrium looks like a good bet though....

Here are a few more alternatives in no particular order. Note - I’ve no experience of any of these either. :|
    Raleigh Airlite 400
    Jamis Quest
    Forme Longcliffe 1.0
    Cannondale Synapse 5 (?)

I like the look of the Boardman CX as a great all round bike.
You only need two tools: WD40 and Duck Tape.
If it doesn't move and should, use the WD40.
If it shouldn't move and does, use the tape.
