Bike arrived today, spent the afternoon getting it set up. I've been impressed with Canyon's delivery and service - ordered last Monday evening and bike arrived right on time today and was trackable all the way with UPS.
The only major-ish problem I've got is that the cable from the rear shifter has got damaged in transit, meaning it wouldn't shift across the whole cassette straight out of the box. I fiddled about with the barrel adjuster and finally got it working, but I've emailed Canyon to see what, if anything, they can do about it.
The only other gripe is with the length of the cable for the Reverb, and the best way to route it. I've tried it on both sides and aren't happy either way really, especially with how the cable fouls on the rear linkage when it's dropped and how it will eventually rub against the frame. My temporary workaround is a cable tie through the seat clamp, but I'll try to come up with something better. If anyone has any better suggestions, I'm all ears!
Other than that, it seems like a great bike. Can't fault the spec, sizing and weight are good, and it looks ace!

buy this and use the bigger guide on the side of your post to channel the hose away from the linkage, works great and looks good too. other firms make them too so look before you buy.

Good looking bike- I've heard that if you loupe the hose around the reverb before fitting the remote to the bar the cable shouldn't foul the linkage.0

Cheers for the ebay links, will investigate that. I tried looping the cable round the post but was a bit pushed for time, hence my quick bodge with the cable tie! Will try again tomorrow, there must be something I'm missing to make it tidier0

Emailed Canyon uk yesterday and got a speedy response from Cullen saying they would cover the cost of the cable repair if I email him the receipt. Happy with that0
