New way to fit inner tubes?

I was in a bike shop in San Francisco yesterday, and watched the workshop guy fit an inner tube in a way I've never seen done before. What he did was take the tyre (tire) off completely and inflate the tube inside it. He then put the valve stem into the wheel and then eased the tyre over the wheel. The advantage he said was that it reduced the chance of pinching the tube.
I haven't tried it myself, but it seemed to work well. Apologies if everyone does it the same way already!
