1st "sensible" bike for the GF...ideas??

After much nagging at why I bu**er off every weekend to ride the bike, I'm trying to get the girlfriend into some mtb'ing too. Nothing crazy, but hopefully she'll see the appeal!
She's an NHS employee we thought we'd try to use the "cycle to work" scheme (seems like a good tax break to me!)
After any ideas you guys might have about sensible bikes that might suit this bill;
Frame size 15", WSD preferable but by no means essential!
Hardtail
Decent enough spec that upgrades/needless wear and tear repairs wont be a problem for a while.
Going to be used mainly on bridleways to start with as we're local to both Peaks and Dales, but with Lee and Cragg Quarry just over the hill some trail centre rides would be likely too.
Girlfriend has some experience of offroad, but would prob still be classed as fairly novice.
Budget is up to the £1000 limit, but not looking to spend the maximum just for the sake of it.
Anyone been in a similar position?

Buy her a cheap and nasty Apollo, then take her around some evil singletrack, preferably with big drop offs etc.
After that she'll not only think you are a manly heroic type, but she'll prefer to stay at home, have bacons ready for you when you get home, and do it all naked.*
