V brakes on cantilever forks

I replaced the suspension front fork on an old mountain bike with a rigid fork (Kona project 2). The fork is advertised as being designed for cantilever brakes, but I have read in several places v-brakes and cantilever brakes work on the same type of forks.
Technically my v-brakes work fine, the only problem is that on even slightly bumpy terrain the brakes rattle around slightly on the fork bosses, which is quite annoying if I am trying to enjoy some peace and quiet.
Is there any way I can stop them rattling? FWIW my v-brakes are Avid Single Digit 5.
Also, another question, when are you supposed to replace v-brake pads? Previously I've always waited until they're just about to get down to the metal, is there anything wrong with this strategy? I note that brake pads normally have several raised areas to form grooves in the pad, so another option would be to replace them at the point that all the raised areas have been worn down level to make the pad flat.

If the bolts are completely in then you can try a washer, you just need to make sure the lever still moves and is not stiff.
Pads are worn when there's the smallest amount of groove still showing.0 -
Thanks, do you mean to put washers on the actual bosses, or do you mean to put extra washers on the bolts?0

You can't on the bosses as the spring would not go into the boss mount.
Under the bolt head, but only if you cant do it up any more.0 -
Are the bolts too long. Try shorter ones0

Thanks for the suggestions, but adding an extra washer (or two extra washers) doesn't make any difference. The excess movement seems to be elsewhere somehow. I guess I will just have to put up with it!0

Flex always is an issue with Vs/Cantis. You could try a 'horse shoe' device , but these only really work for in/out flex on the bosses.0
