New superstar grips fitted fine, but the end caps aren’t gripping even after tightening the little screw thing. Am I meant to be doing something else or is it my bars? :?

The end caps are just plastic plugs that push into the bars. Tightening the bolts wont make any difference - do not over tighten them, they a pinch bolts!

What make are you bars? Are they steel by any chance?

so they should be quite stiff when pushing them on?. they rest on the ends ok but when i put the bike down they fall off far to easy.

the bars are 'Giant Sport aluminium riser ' stock parts!

I take it you have loosened the screws off first, pushed them all the way onto the bars and are actually tightening / clamping on the end of the bar and not fresh air? They can be quite a tight fit on the end.
Then just push the plastic end cap in as styxd says.
