Having trouble going downhill

I am a maniac when it comes to mountain biking. If there is any track and any bike I will ride it. My main problem though is that I had my Carrera Valour up on the south downs and there was a steep drop-off I decided to go down. the only problem is that what I didn't know was that there was a stream in the track that was rushing over mud and loose rocks.
I ended up in the air by going over a stump with me in the air as well and as I land, my pedal gets swiped away from my foot and I end up practically useless to brakes, pedals and balance. I was still on the bike at the bottom but only by fluke.
Is there any way that I can dodge this from happening again because I hurt my crown jewels quite a bit. :shock:
Also what is the best tyre for sticky mud/chalk/road use?

My god road cycling is scary! I'm going to keep my relaxing rides to the trails where everything is green, fast and less crazy.

No such thing.....
Sticky mud - You need nobbies / spikes / tread (Panaracer Trailraker / Continental Survival / Bontrager XR Mud)
Chalk - you need skill & luck (If it's wet)
