On these bars what is the most common choice re 20mm or 40mm riser i assume the 40 mm puts your in a more upright position

You assume correct. The trend a few years back was the higher the rise, the better, however, the latest trend is wide but low. If you are requiring a higher front end and a more relaxed position, get the 40mm rise, otherwise 20mm is good.
