As I've been getting more accustomed to life in the saddle I've been making adjustments to my bike, my stem is now as low as it can go for a much more aero position but because the spacers are now above the stem it creates an unsightly lump - can the top of the forks be cut back to remove the growth?

Yes, the material that the fork steerer is made from will dictate exactly how you do it. Google is your friend.

Or probably a £10 job for a decent LBS.

Before cutting the stem, make sure you are 100% sure that you are totally comfy with the new low position. Make sure you've been on a good few long rides before making the cut - remember once cut, the stem can't be lengthened again. It's quite normal to cut the stem to allow for one spacer above the bars.

It is also worth noting if you intend to sell your current bike at some time in the near future, it may be best to put-up with the lump, as the potential new buyer may not be as flexible as you.
