Rain bouncing off the pavements theres only one thing for it-CAKES
Ingredients-250g porridge oats,175g cubed butter,150g sugar (pref demerara),1tbs golden syrup+any thing handy eg raisins,sultanas,chopped nuts,dates,stem ginger
Method-melt butter sugar syrup in a warm pan,add oats and extras and stir-add to 20-25cm baking tray lined with scrunched up greaseproof paper,foil.Bake 15-20 mins at 180c-longer for a hardbake,shorter for chewy.Cut while warm into suitable sized bars.Keeps up to 10 days in airtight box-defy anyone to last 10 days.Enjoy. :D:D

    My somewhat stolen flapjack recipie.

    750g butter (preferably unsalted)
    450g golden syrup
    500g soft brown sugar
    1kg porridge oats
    Feel free to add dried fruit if you wish,even mashed banana may work

    Prep: 20 mins | Cook: 35 mins | Extra time: 8 hours, setting

    1.In a large pan, on a low heat, melt butter, sugar and syrup till runny. Mix in the oats really well, making sure none are left uncoated by the butter-sugar mix.

    2.Pour into a 20x30cm tray lined with baking parchment. Level out the mix with a spatula. Bake in a preheated oven at 160 C / Gas 3 for 25-35 minutes. (These should look seriously under-baked, that's the point. When they are done, if you grip the pan and give it a little wobble, it will look uncooked. This is perfect.)

    3.Cover with a clean tea towel and leave for a whole day or overnight till completely cold. If you try and turn them out before, they will be ruined. When they are completely cold, turn them out and cut into squares. Wrapped in cling film or foil these will last a week at least. They freeze well too!

    Don't forget when you're done!!

    I think I'll try that flapjack recipe and add some cherries.
    Mrs Zippy is an excellent cook/baker but for some reason struggles with flapjack recipes!?

    flapjacks are quite hard to get right tbh. Takes a fair amount of experimenting because the cooled result depends how long they're in the oven for. Some people go for crunchy,others soft and moist

    25 mins in a fan assisted oven left my last batch moist but easily crumbly - they didn't last long but they would have easily survived(intact) a days worth of jersey rear pocket or saddlebag

    You tried mine? I added mixed spice and cinnamon to my last ones. Apart from smelling like christmas,they were extremely nommylicious

    It tasted delicious and most of it got pinched!

    It was lots,I don't measure stuff like that lol. Go by look or taste :D

    If you are gonna make energy bars go for the ultimate.

    Mrs T's homemade energy bars
    Apricots, dried, chopped 80g
    Cranberries, dried 50g
    Sultanas 80g
    Dates, chopped 70g
    Honey 3 tablespoons
    low fat butter with salt 80g
    Nuts, almonds, chopped 60g
    Nuts, coconut, desiccated 40g
    Nuts, walnuts, chopped 50g
    Oats 45g
    Figs, dried, chopped (or prunes, chopped) 80g
    Seeds, flaxseed 75g
    Seeds, pumpkin 70g
    Seeds, sesame seeds 70g
    Seeds, sunflower seed 65g
    Spices, cinnamon 1 tsp 
    Wheat flour, whole-grain 70g
    Wheat germ 55g
    Gram Flour 75g

    PREPARATION
    place all dry ingredients in a bowl and mix. Melt butter together with the honey and add. Mix really well, using your hands to really squidge the mixture together. Press into a baking dish lined with greaseproof paper and press down with the back of a spoon. Bake at 200C for 15-20 minutes. Divide into 18 pieces while still warm but leave in baking tray for 10 minutes. Remove and leave to cool on a cooling rack, although this is very difficult as they're so yummy you'll want to try one straight away!

    Suitable for diabetics, tested on me!
