upgrade to 8 speed cassette, any help !!

Hi,
any help or experienve will be greatly appriciated,
I have a 20 year old Saracen Eiger with 21 speed grip shift and V brakes, I want to replace the grip shifts with normal shimano STI shifters, the problem I have found is this.... I cannot find high spec 21 speed shifter set that comes as gear levers on there own, they all come with brake levers built in, but these are not V brake compatible.
will an 8 speed cassette fit on my hub (deore LX FH-M550)?

    An 8 speed cassette won't fit on a 7speed wheel, it's possible (though highly unlikely) that it could be a 7 speed cassette with spacer on an 8 speed wheel of course.

    You can use 8 speed shifters with a 7 speed rear wheel of course, it's just shifting to 8 will do nothing!
