you can get it on any of ribbles bikes using the bike builder/special edition section and pick the components you want.
Ive got the sportive bianco with apex and its a brilliant bike and i really like the gearing.
I had a great experience buying through ribble and for the budget you have you can upgrade all the components -
Cannondale Synapse Carbon Apex http://www.cannondale.com/gbr/2012/bikes/road/performance-road/synapse-hi-mod/2012-synapse-carbon-6-apex-20262 ~£1700 i think
and Dolan have a selection of models available with Apex in and under your price range http://www.dolan-bikes.com/road-bikes/Carbon/Sram%20Op
then just did a quick google search and this came up:

Dont think too many LBS or dealers taking £2k of you hard earned will mind too much swapping out a rear mech and Casette for you.
The Trek 3.1 H2 is actually 105 shifters, Sram Apex Chainset, 105 front and Rear mech and 30T tiagra cassette
Its a fantastic bit of kit and in all honestly should give you the range you need.
A guy in CPLUS fitted a Scott CR1 with Apex rear mech and casette just to do the Marmotte and have better climbing gears. (Also added Ksysrium R sys wheels / and failed to complete the Cols)
