My discs say that only resin brake pads can be used on them. However, I can't seem to find anything other than natural or sintered pads anywhere. Am I being thick or are they just really hard to come by.
Just ride.

    Natural well be resin.

But TBH it is only shimano saying this due to wear issues if you use other pads.

Sintered make the braes work quieter.

I've used sintered pads with Shimano rotors for years, they don't seem to wear out, thinks it's just Shimano covering their backside.
