I just got a reply from a butcher about buying a side of pork from him (£95 seems pretty good for 35ish kg of pig!)
i want it to have a go at butchering. Ive skinned and butchered a whole sheep before which was a fascintaing and satisfying process but it wasnt pretty once finished.
the guy has offered me some instruction if i wait until january as he wont have time between now and then with christmas looming.
how hard should chopping up a pig be?

Very
All my family on my mums side are butchers. Had their own slaughter house too. I've butchered a few cows and pigs before.
It's one of those things that I don't think I'd want to attempt without a professional showing me where to make the cuts. It's not just about where you cut, it's how you actually make the cut and stuff like that too (as you'll know from your experience with your sheep).
Remember, a good butcher will have spent YEARS training up. It's a proper trade and takes years to learn how to do a proper job.
My advice would be let the professional show you.0 -

thats the thing, i am more than certain i can separate a pig into it's various parts, but it would be nice to know how to cut a shoulder and leg, for example, properly withought it all ending up like it has been pulled through a shredder.
the sheep i butchered was fairly successful in as much as i got it into large joints which were easily split between a number of people but none of them were too pretty, id like to be a bit better at the art and presentation of it.
either way, for the money its a great value way to buy your meat and if you consider there is only actually me who eats meat in the house (although wife RE is a vegetarian she will eat pork, but only the sword part) it should last me for flipping well ages.
hmm, might need to factor in the cost of an extra freezer too!!0 -
Chest freezers can be had out of classifieds for fark all. Plus, when not being used to store large amounts of pig based products, you can use then to store the dismembered bodies of your victims.
Stops them stinking up the cellar.0 -

suprising how the killing and storage of pigs is so similar to the killing and storage of humans0 -
