Alfine Hubs... help..

I'm being drawn to the alfine hubbed bikes on offer by On One bikes... however how do the gears work... not in the mechanical sense but in the gearing ratio sense?
for instance does an 8speed alfine offer both extremes of gears as my 27spd bike and six speeds, equidistant, in-between? if so does an 11speed offer both extremes and 9gears in betwen?
or is that just the dumbest statement ever?
