Biking Holiday Destination Jan/Feb?

I have some time off over the winter and am thinking of a mountain biking holiday for a few weeks :D . Any ideas on where in the world is suitable at that time of year? (i.e. not freezing/snowy/raining too much etc).

Ideally I would like to be able to base myself in one or more areas from where day rides or even multi day-rides with accomodation are avaiable. A cheapish country would be ideal as I could be there for some time but at the same time it would be nice to know there was a decent bike shop or two (even if only in the capital) in case of breakages etc.

    The biking out is Spain is pretty technical... if that's your sort of thing.

    And the weather is pretty good around Christmas.

    Both sound like good ideas! Have often considered biking in the Canaries but never been sure how much single track is available there? I was in Lanzarote a few years back (not biking) and it looked like there were plenty of dirt tracks but most of the real off-road stuff was too rough i.e. boulder fields! Is there more variety in Tenerife?

    Also, are the Sierra Nevada in snow around xmas? Looking in the same direction, I would love to go biking in the Atlas but again think there may be too much snow on the passes.

    Another option I'm looking at is Central America. Has anyone been biking in Mexico or Guatemala?

    There is a cablecar at Benalmadena that takes bikes too :-)

    The Sierras do have snow cover, but there's still plenty of riding to be done lower down.

    Cheaper to get to Spain over Xmas...

    Cyprus might be worth looking at as well, will let you know when I get back in December.
