Summer tyres tend to be lighter and faster. Winter tyres tend to have grip in mud.0 -

summer tires will tend to be lighter and also will probably noty have any 'tread pattern' and gain the grip from the compound of the rubber. (for instance my Schwalbe Ultremos)
Winter tires my well have a pattern or tread of sorts to help with the contact patch on the road surface and clearing water (For example my Gaterskins)
Also the winter tires will likely have a better and or thicker kelvar layer in to help be more puncture proof due to the litter, branches,thorns, gravel etc etc that would be on the road through the winter months rather than in the summer.
Also for the winter I ride with a 25mm rear tyre rather than 23mm for comfort as well as bigger contact patch.
