some people have issues. download/read the manual and it takes a bit more force than you think.

I'm sure there's a good reason not to but I've used a flat head screwdriver to help ease them out, pushing through from the top. When installing fresh pads I find the same screwdriver pushing on the metal backing plates of the pads helps pop them in place. The hardest thing is sandwiching them together and getting them most of the way inside.
    Current bikes:
Norco Sight 3 SE (on order)
    Specialized Allez 2010

    Old bikes:
Commencal META 55 custom build (Stolen :( )
    Boardman HT Comp 2010
    GT Avalance 1.0 2006(ish)

Bit fiddly, so some long nose pliers can help. When fitting new pads, always a good idea to push the pistons back with a screwdriver whilst the old pads are still in. You wrech the old pads, which doesnt matter then means it is much easier to get the new pads on. Once you get the hang of it they are quite easy to do. Unless your fingers are freezing cold :(

Talking about juicy 3's on the rear of the calliper there is a small chrome retainer...what is its function and how important is it?

It s shown in this picture under the separator?

it should be on both calipers. It holds the pads in place.
