I've just made a damn fine chili and a lovely chorizo and bean stew even if i do say so myself :D

Anyone else here like to do a bit of cooking and want to share some recipes?

This evening I'm going to make a very rare Italian dish that not many people have heard of.

    It's called Spaghetti Bolognese.

My current pre-ride pasta mashup of choice is....
Diced fresh chicken breast, mixed in with some Pasta, with sweet chilli, garlic, ginger, black pepper, and a tiny bit of mayo, and some parmesan on top.
And if I have any - pineaple chunks in there too.
    Sweet as.

I'm into cooking with alcohol these days - dram of whiskey in chili or tequila, lime and spices over chicken... I doubt there are limits to what can be experimented with here

i'm quite prone to rustling up the odd bit of scran occasionally, my speciality is pizza, home made base, sauce and the topping of your own choice. my current favourite is smoked salmon and fillet steak. Buy the leftover end of fillet and the salmon trimmings and you get a gourmet pizza for pennies, I bought a pizza stone for about 13 quid and it has saved me a fortune. we honestly haven't phoned a pizza for about two and a half years
  • I had Italian tonight...

    Tonight mine was typically British

Large fish (cod) and small chips from the best chippy in the area, plus a 5 minute cycle there and back to collect.

    WIN!
  • Tonight I'm having Indian!

got this in the slow cooker just now, will be ready in another 4 hours.

approx 440g braising steak, diced into 1/2 inch cubes
approx 300g Potatoes, diced into 1/2 inch cubes
    3 small onions, finely chopped
    1 large carrot, sliced
1 red pepper, cut into thirds and sliced
approx 100g closed cup mushrooms, quartered
4 small/medium red chillies, finely chopped
    1 chipotle chilli, roughly chopped
1 inch piece of ginger, finely chopped
4 or 5 cloves of garlic, finely chopped/crushed
    1 1/2 tsp paprika
    2 tsp cornflour
    1 beef oxo cube
    boiling water

    1. Coat the braising steak in the corn flour.
    2. Dissolve the oxo cube in 250ml boiling water.
    3. Add all the ingredients into the slow cooker, if required add more water until all the ingredients are not quite covered.

    Fancy a brew?
  • Hmm,

Well tonight I've cooked the kids squid and chips with garlic mayo, and me and mrs spong have had fennel risotto with fresh rosemary and garlic bread.

Tomorrow it's baked mackerel and lime chili salsa, with baked new garlic potatoes and rocket salad. Kids are having chorizo, anchovy, caper and tomato pasta.

Next I'm considering leg of lamb with cardamon, garlic and salt with rice and bits for us and spicy smoked paprika chicken wings with a Greek salad for the kids.

No Idea after that until Saturday when we're all off for oysters, crab, pickled herring and salmon pate.

    Foooooooooood.

Off for a cheese and linghams toastie.
Visit Clacton during the School holidays - it's like a never ending freak show.
