Hi, If you choose mtb there is a trail centre at haldon forest about 10 miles from torquay back towards exeter. Lots of other places check out the more dirt site

Haldon is okay, but if you'll be bored of it after a day and want more. It's mostly family trails (half for walking), and one okayish XC trail that has wild claims of being "red" category expert and a bottom section of being "black" extreme. It's nothing of the sort and apart from the black part you could take little kiddies on it (and some do).
Used to be much better but it got "tamed". The black part is okay but far too short and it's no more difficult than a simple red in Wales.
Whole lot will occupy half a day, unless you explore off the official trails where there are some much better bits, but still too short.
Otherwise, Dartmoor has opportunities. Haven't done it on an MTB, but I hear there are some interesting bits. If you stick to an official route you'll be pottering along bridleways and flat disused railway sections though. Has much potential for long distance XC though.
And if you're into downhill, there's Gawton down by Tavistock.
There are a lot of reasonable hills in Devon, but so much privately owned0 -
There is a good bike shop called Partridge cycles near Haldon Woods. You see it from the bottom of Telegraph hill. They can give advice and are well stocked. another bike shop on Castle Circus at the top of the main street who seem to know there stuff.
If you are going off road its also worth trying Dartmoor depending on weather and how much time you have. I did a great ride from North Bovey earlier this year, 20m and took six hours. Very technical in places but great scenery and some great descents, also a lot of people go to Burrator Resevoir and hack out routes from there. Or there is the two moors way that covers a big area. If you go up just watch the army firing range and the weather.
If you take the roadie there is also stacks of country lanes that will take you out to places like Totnes, Dartington, Newton Abbot and Teignmouth.
Apres ride, depending where you are staying 'the Hole in the Wall' does cracking ale. Best traditional pub on the Harbour. If you are round the St. Marychurch way then The Crown and Sceptre is an amazing pub with amazing ales......

Oh, and depending on who you are with, the Mendips make a nice couple of hours hacking on the way down or back up, and its near the Thatchers Cider brewery thingy....
