Depends on the tyres/size, there is often a recommended on the tyre wall. I'm a bit heavier than you and run Gatorskins at 100psi Open Paves 110-120psiNeil

just go by the max psi indicator on the tyre
i pump mine up 5 - 10psi over the max (110 max) then again i'm only 11 stone0 -
Approx 100-110psi for general riding on 700 x 230

It's generally accepted that it is a mistake to pump tyres to the maximum unless you are very heavy.. They absorb bumps less effectively and grip, comfort and speed are compromised. The heavier you are the higher you might want to inflate your tyres. I'm 11 stone and I pump my Conti 4000s tyres to 100 psi on the front and 110 on the back.0 -
I run my Gatorskins at 105-10psi (700x25) i am 12 1/2 stone
the recomended is 95psi (seems a bit low to me) but the max is 120 - which i think would compriise a bit of give in the ride."If you always do what you've always done, you'll always get what you've always got."

Why would you pump tyres higher than the max ?
Would you also tighten your seat bolt tighter than the max too ?
I used to have Vredesteins at 140 PSI, but now I get a much better ride and less 'P's with my Contis at 95 PSI.0 -
Shcwalbe Ultremo ZX 115 psi0

I run my clinchers at 90F 100R, and my tubs at 120F 140R, no need to run them any higher than that, and I am pushing 100kg......0

The roads in the UK are some of the worst in Europe and do not lend themselves to high pressures. Pump up tyres hard and your ride will be an uncomfortable one and your fillings might come loose. Most people work this out after a short while.
I only ever pump my tyres up to the minimum.0 -

LoL!
To the OP - I don't think I have ever had a tyre where the recommended PSI is not embossed or printed on the side of the tyre.
Don't your tyres have that?
The higher the PSI the harder the ride. As long as it is between the min and max then you are gonna be OK.
I run my tyres at near or max - just because I like a hard ride.0 -

Completely agree with the first sentence. The roads near me, main roads in a provincial town are literally "patched" every 10 - 20 metres!
Whoever "maintains" them and installs services has never heard of making good to the surrounding area.
I guess it is fine for drivers. For cyclists it is shocking.
I actually change my journey and go on a longer, harder ride when commuting just so I can ride on a smooth road.0 -
Around 100psi, you can fart aboiut lowering pressure in the rain or if you're light etc. but it won't make much difference and 100psi is easy to remember0
