This is probally going to be a really silly question but behind the crank arms on 2 of my bikes 2011 five pro and a 2008 Scott scale 20 is a dial thing that has mountain wrote on it. Well it looks like it is a dial anyway. One has slx and the other xtr. Can anyone advise?

If it's the thing that has mountain written on it then it's just the bottom bracket cups which house the bottom bracket external bearings. The ridged surface is for the spanner interface, they should be quite tight.

Your XTR's probably have a little dial on the non-drive are ( the arm without the rings) this is for preloading your bearings.

Thought it was something to do with the bb. When they write stuff like mountain on I just want to fiddle with it lol

    sounds like the preload adjuster.

which XTR and if you download the manual you will see all the info.

but this is another case of a picture is worth a 1000 words,
