Trying bikes from Evans

Hi everyone
I've got a cycle to work voucher for 1K and I'm probably going to top it up to spend around 2K. The voucher is for Evans only.
I'm after a carbon road bike, but the more reviews I read, the less I seem to know. I think the only way to know for sure is to try a few bikes. All the Evans shops seem to stock different bikes and I was wondering if anyone had any advice for trying out 3 or 4 good road bikes in Evans in London (preferably around Wandsworth / Waterloo).

When I demo'd a £4k+ bike from Evans they only let me have a quick ride around the block and weren't really interested in altering anything apart from the saddle height. I actually quite like Evans for most stuff but not sure I'd want to buy a road bike from them.0

I'm far from an expert but don't get too caught up on the bike being "carbon" if you're not careful you'll pay loads of money because it's a carbon frame and get less quality elsewhere which will compromise not only the reliability but also the enjoyment you get from it.0
