And felt pretty unstable, what loads do people normally carry?
Brakes were not existant, load was jolting me back and forth. Was carrying three large gravel bags.

Won't be carry that much again!
Say... That's a nice bike..

I had 4 bags of sand in my panniers (60kg), it was unstable too. But if I carry my wife on the back of my bike (also 60kg) there's no problem.

I think they just sit awkardly. 75kg should not be a problem.

I have a carry freedom y-large. the most I've ever towed with it was three bags of compost which'd be about your 75kg I guess.
It felt fine brakes wise - after all it's no worse than a tandem. Obviously takes a bit more time to stop, but whaddyaexpect? Stability was also fine so long as it was loaded correctly.
However normally I'd think around 30kgs is a reasonable amount for any distance as the hills etc get a bit OTT otherwise. Went touring with it once and had around 25kgs on it behind a tandem for 70-100mile days.
Have also towed the wife on it, but not very far!
