Probably a stupid question but I'm desperate - does anyone know if the hollowtech II bb's are interchangeable - specifically would a Shimano XT hollowtech II bb work with a Shimano 105 (road) chainset/bb shell?

yes...although they may not last was long. Its the same 24mm axle (25mm bearing with 1mm inserts)
its the spacing / width that sometimes different. easy way is to remove the plastic spacer that way their fit.
I'm running a road BB on my MTB as that was all I had to hand and its been fine....so much so I left it there ! (may not last as long tho)

the only difference is the length of the threads on the drive side cup on a MTB version.

just fit as per the crank instructions.

Not quite your question but I replaced a Tiagra BB with an Ultegra one with no ill affects.
