A cyclo cross bike with hydraulic disc brakes and alfine hub would be nice. Does it exist? I've seen one but it has canti's.
Say... That's a nice bike..

There's the Genesis Day One Alfine, which has cable discs. day-01-alfine_highres.jpg

You won't get hydraulic discs that work with drops for a while yet, and they certainly won't be Alfine compatible.

I haven't seen one with hydraulics, as it would require one of those "under the stem" adapters.

On-one also make a drop bar bike with Alfine and cable discs, but not the 11 yet. Should be coming, though.

SRAM/Avid are rumoured to be working on road compatible hydraulic discs for 2012, following the UCI's decision to allow disc brakes in cyclocross races.
