Campag 11speed cassette modification?

Can I change the 12 to an 11 cog on a 12/27 cassette if I also change the lock ring? Would the jump from 11 to 13 feel horrendous?

    no idea if it's possible

    but having that kind of step at that end of the cassette isn't something i'd fancy, it's over 18% difference

    Quite often because I have a compact. I have an 11-25 on my other bike and like having an 11. I would like a 27 for the 100mile + sportives when I get weary.

    at 91-ish cadence you'd be doing 30mph on 50-12

    you shouldn't really be spinning out until cadence is well past 100, the only time i have this problem is going downhill :-)
