Stem problem

Hi,
Im currently stripping this bike down to the frame and ive hit a problem.. I want to replace my forks, bars and stem. This is what ive got:

How do i get this stem off?? And forks off? Any help greatly appreciated.

    it is a Quill type.

    see parktools.

    undo the bolt at the top and tap it back down to fee the wedge and remove the quill.

    ...and having removed the bolt , drench down inside the tube in WD40 and hit it repeatedly with a big hammer until it frees: set aside two hours and your favourite swear words for this activity.

    Screw the bolt back in a little bit and whack it to loosen the wedge.
    Once loose the stem should come out, then just undo the nuts which are screwed onto the fork, and the fork should slide out.
    In theory.
