5-6 day trip in a weeks time.....

I've just realised that I've got a nice bit of time off work in a week what with some leave and the bank hols, so I thought I'd cease the opportunity and get away on the bike with my Dad.
But where to go? Thought about squeezing LEJOG, but realistically its going to be too much, what with getting back from JOG.
Current options include:
Tour of Wales - either driving up and leaving the car somewhere and touring or going central and day tripping. Pros: Easy, flexible and cheap. Cons: weather risk.
Ferry to Santander, and day triping / touring into the mountains. Pro's: easy from home. Prospect of better weather. Mountains! Cons, expensive, very long time on ferry, maybe take too long with limited ferry times.
Ferry to Santander and riding back to Roscoff, and ferry to Plymouth. Pro's: easy from home. Prospect of better weather. Cons, expensive, long time on ferry, flat.
Cheap week to Benidorm / Majorca and day tripping. Pro's; weather, landscape. Cons; getting to airport, getting right departure, taking bikes on plane.
To be honest Wales seems like the most practical option, but interested to see what else people can come up with?
