New here, advice please about components for my bike?

Hi everyone, new to the forum.
Hoping people here can give me some info on parts for my bike and compatibility.
I recently started road biking and purchased a bike at the end of last summer. Being the way I am with any hobby I take up, I decided to start adding more parts to my bike. Currently I have a Cervelo S1 2010 with Zipp 404's tubulars.
Now I want to add are other components.
Firstly, I wanted to know whether cranks are universal? My cervelo came with shimano ultegra components (6600 series i think RD and FD as well as the shifters). The crank is an FSA gossamer compact crank (50/34) and i wanted to upgrade to a normal crank tooth setup (53/39).
Firstly, can i switch to another FSA crank or another series shimano crank? are the teeth different and will they work with the chain i have currently? Also since im switching from a compact crank to a normal size crank will it work with my rear derailer and casette? In other words.... what do I need to change to make my setup work?
Furthermore, I have been looking around for handlebars and stems and was interested in the Ritchey components..... anyone hear good things about this company?
Any info would be greatly appreciated.
